Shortbread Biscuit Recipe

It’s just a generic shortbread recipe, nothing magic.

Ingredients
125g / 4 1/2oz caster sugar (I prefer unrefined)
225g / 8oz butter*
350g / 12oz plain flour

Oven: 180C / 350F/ GM4

Instructions
Beat butter and sugar together in a large bowl.
Add flour. I don’t own a sieve, so I just pour it in from a bit of a height to get some air in, it doesn’t seem to matter.
Mix together with your hands until it beomes dough like and smooth.
Chill in the fridge for about 15 mins.
Roll out on floured work surface, and use cookie cutters to cut out shapes. I have a set of star cookie cutters and a little person. If you don’t have any you can use a glass to make rounds, or just cut out shapes.
Place biscuits onto baking sheets (either greased or covered in baking parchment) and cook for 10-15 minutes. When they’re just starting to turn brown it’s time to take them out.
Leave on the baking sheets for 10 minutes or so, then cool on wire rack.
Sprinkle with caster sugar as they cool if you like. Sometimes i do, sometimes I don’t.

*although in theory you could use margerine instead of butter I wouldn’t recommend it. The shortbread has a lovely buttery taste that would be lost, and lets face it, it’s not healthy anyway, why pretend.

  8. jimbob – to make them healthier – don’t make them and have an apple instead. Shortbread should be made with real butter and sugar, there’s no making it healthy, but everything in moderation is fine by me.

    Great recipe. I followed Ken’s advice and rolled it in cling film. EASY! Since I live in Kenya where there is lots of tropical fruit, I mixed in tiny shredded candied pineapple into the biscuits! They turned out very well!

  23. Salted usually. It’s the default here. For most things I prefer unsalted but a tiny bit of saltiness is nice in shortbread.
